- 2 cups carrots, peeled and chopped
- 1 tbsp unsalted butter, melted
- 1 tsp olive oil
- 0.25 tsp kosher salt
- 0.25 tsp freshly ground pepper

Instructions
- Preheat your oven to 425 degrees and coat a baking sheet with cooking spray. Set aside.
- Combine carrots, butter, olive, oil, salt, and pepper in a medium-sized bowl and toss to coat evenly. Arrange your carrots in a single layer on your prepared baking sheet and roast for 15 minutes. Serve warm.
