Ingredients

- 2 common tomatoes (seeded and diced)
- 1/4 cup green onions (green parts only – diced)
- 1 tbsp parsley (minced)
- 2 tbsp fresh lemon juice
- 1 tbsp olive oil
- salt & pepper to taste
Instructions
- Place all ingredients in an airtight container. Shake well and refrigerate for at least 2 hours before serving. Keeps for 2 days.
